Salsa Beef Stew
1 1/2 lb ground beef
3 Tbsp chili powder
1 small onion chopped
2 carrots chopped
2 carrots chopped
3 cups chicken broth
1 can diced tomatoes, undrained
2 cans black beans, rinsed and drained
1 can corn drained
2 cups salsa
Brown
ground beef with half of the onion. Stir in chili powder. Set aside. In a
large pot heat olive oil and cook remaining onion and carrots until tender, about 5
minutes. Add broth, tomatoes, black beans, and corn. Cook 5 minutes,
stirring occasionally. Stir in beef mixture. Heat through. If desired,
serve with cilantro, cheese, sour cream, and tortilla chips.
