Citrus Pulled Pork Tacos

We love Mexican food at our house! These tacos were so delicious. The orange and lime give it a light citrus flavor. Yummy!

Citrus Pulled Pork Tacos
1 pork loin (2 lbs), cut into 3" chunks
1 tsp dried oregano
1 tsp chipotle chili powder (I used regular chili powder)
1 tsp cumin
1 small onion, peeled and quartered
3 cloves garlic, minced
1 cup chicken broth
1 Tbsp tomato paste
1 Tbsp honey
juice of 1 orange
juice of 1 lime
salt and pepper
corn tortillas or flour tortillas, warmed
garnishes: lettuce, tomatoes, sour cream, guacamole, salsa

Preheat oven to 325. In a dutch oven combine pork, spices, onion, garlic, chicken broth, tomato paste, honey, orange juice, and lime juice. Over medium heat, bring to a simmer. Transfer to oven and cook, covered, until pork is tender and shreds easily, about 1 hour and 45 minutes. Remove meat onto a cutting board. Set the dutch oven over medium heat and reduce until liquid becomes slightly syrupy, about 5-10 minutes. Shred meat and return to dutch oven. Allow pork to soak up liquid. Season with salt and pepper. Serve in tortillas with desired garnishes.
