Cheeseburger Soup
1 lb ground beef
3 Tbsp butter, divided
3/4 cup onion, diced
3 carrots, diced
2 stalks celery, diced
1 tsp dried basil
1 tsp dried parsley
4 cups chicken broth
5 cups potatoes, peeled and chopped
2 Tbsp flour
2 cups shredded cheddar cheese
1 1/2 cups milk
1 tsp salt
1/4 tsp pepper
1/4 cup sour cream
Brown the ground beef in a large pot. Drain and set aside. In the same pot melt 1 Tbsp butter. Add onion, carrots, celery, basil, and parsley. Saute until tender. Add broth, potatoes, and beef and bring to a boil. Reduce heat; cover and simmer for 10-12 minutes or until potatoes are tender. In a small skillet, melt remaining 2 Tbsp butter and add the flour. Cook and stir for 1-2 minutes or until bubbly. Add to the soup and bring to a boil. Cook and stir for 2 minutes. Reduce heat to low. Stir in the cheese, milk, salt, and pepper. Cook and stir until cheese melts. Stir in sour cream. Serve topped with additional cheese.
